The 8-Inch Chef’s Knife is the workhorse of your kitchen. It’s great for chopping vegetables, slicing meat, or mincing herbs. Our chef’s knife features a blade made from AUS-10 steel, hardened to 60 HRC, which provides excellent edge retention and corrosion resistance. The blade also has a slightly convex grind for improved food release and a rounded spine for comfort. The sloped half bolster and ergonomic handle work well with a variety of grip styles. The knife is balanced at the bolster.

Goldilocks Performance

The not-too-thin, not-too-thick, blade measures 2.5mm at the spine. It glides through food while being able to take a beating. The AUS-10 steel provides better edge retention than commonly used German steels, without being brittle and chip-prone. The blade is sharpened to a keen 12.5 degrees on each side.
